Alternatives to Tom Turkey; late thawing tips

Hunt County Agrilife Extensionagent Mary Sue Cole says most families don't really need a large Thanksgiving turkey these days, often leading to a lot of waste, so she recommends Cornish hens as an excellent alternative.  And Mary Sue says while it's recommended to thaw large turkeys in a refrigerator for 48 hours, they can be thawed in cold water in less time in an emergency.
