This week, Luke visits with Victoria Cappadona (www.cappadonaranch.com) and discusses the many uses of mesquite beans. Did you know Indians of the southwest used the mesquite tree for 20 percent of their diet? The beans make an excellent drink much like coffee and ground meal makes a great naturally sweet, nutty flavored meal for baking.
